Goals:
A – Introduce functional foods in the finishing diets that guarantee a substantial reduction of male odor, androstenone and escatol in fresh and processed pork meat and to investigate the effect of processing techniques on the perception of odor and taste.
B – Introduce hygienic and animal welfare practices in accommodation and transport that attenuate the absorption and synthesis of male odor precursor compounds in fresh and processed pig meat and ascertain the effect of processing techniques on odor and taste perception.
C – Form a sensory panel specialized in the detection of androstenone and escatol in fresh and processed pork meat.
E – To present a quality seal (+ CARE) that demonstrates practices associated with the reduction of male odor in meat that in parallel provide a higher degree of animal welfare, improve animal health and reduce the environmental impact of pig farming.
F – Gaining consumers of pork in very demanding markets in relation to animal welfare conditions and sensitive to the assumptions under study. Accomplish a consumer study.
